The thin inner bark of young cinnamon tree branches is prised out in long strips that curl into rolls or quills upon drying. Once dry, the bark is cut into shorter lengths for sale. The essential oil is extracted through the process of steam or water distillation, using the leaves also. It has a warm, spicy and herbal aroma and is clear to pale yellow in colour. Egyptians once used it for foot massage as well as a remedy for bile.
